Everyone loves the 4th of July! Celebrating our independence from “bangers and mash” is one reason – grilling burgers of all shapes and size is another – like this “double decker!”

I love this picture. My daughter Jessica posed in front of an ad for the “Green Peas Pachislo Burger” when we were in Tokyo…we don’t know what it was, but in hindsight we should have walked in and ordered one, just to get a real picture of it!

Building A Better Burger!

Look at this picture above. Your basic hamburger uses good quality ground beef with at least 15% fat content, to ensure lots of juicy flavor. I add minced onion and garlic, pink hawaiian sea salt, pepper, and a bit of Worcestershire sauce….boom, you are ready to grill!

What can you say? Build your better burger this way and you are golden:

Make your patty as usual, but this time top it with sliced avocado, and a heavy dose of wasabi mayonaise. Trader Joe’s sells it, or buy some great mayo and wasabi and mix it together to the strength you can handle…this is delicious with a Sapporo!

I am also a fan of bending the “burger rules” as necessary to offer up a unique taste sensation…and what better sensation to celebrate than “Sriracha!”

The Sriracha Burger!

This is a GREAT idea…the recipe is from the terrific “Serious Eats” website!

3 pounds ground beef (preferably chuck, 80/20)
1/4 cup soy sauce
10 tablespoons Sriracha
4 teaspoons freshly ground black pepper
4 slices thick-cut bacon
2 large sweet onions
3/4 cup blue cheese dressing
8 sesame seed buns
8 thick slices Swiss cheese
1 large beefsteak tomato, sliced
Arugula or romaine lettuce

In a large mixing bowl, make your burger patties with the ground beef, soy sauce, 5 tablespoons of the Sriracha and pepper.

Cue The Bacon!

Cook your bacon, then use the bacon fat to cook your onions into a cartelized taste treat!

Grill the burgers, and while they are cooking, combine the blue cheese dressing with the remaining 5 tablespoons Sriracha to use as a topping!

There you go: a cheesy, oniony, spicy, bacon-y thing of greatness!

And speaking of “GREATNESS”, how about a bacon-covered macaroni-and-cheeseburger!

Once you’ve tried this, you will never go back to a plain old cheeseburger again!

And of course, my favorite burger of all is this: just add french fries to the top of the burger, then a bit of tartar sauce, and top it off with cheddar cheese – a burger and fries all in one!

Japan’s Burger King Goes Pumpkin Crazy!

Burger King Japan’s BK Pumpkin, and its bigger, pumpkinier sibling, the Pumpkin Bomb. Via a Google translated press release: both burgers come with beef patties, fried kabocha pumpkin slices, bacon, and lettuce. They’re also topped with a nut sauce made from sesame seeds, peanuts, almonds, cashews, and hazelnuts. The difference between the two? Pumpkin Bomb has a whole bunch more pumpkin on it, ten slices in total. A Pumpkin burger? I don’t think America is ready for this yet….

So I had my first 5 Guys burger, and yes, it lives up to the hype…this is one juicy, cheesy, tasting burger – and it’s BIG!

I also mentioned that it’s “cheesy”, right? This baby was “all in” – everything they wanted to put on it, they put on it – and it oozed real good…

It all began in England, when a dissatisfied customer went viral against Tesco food store for “shorting” him one rasher of bacon!

A “rasher” of bacon in England is a strip, so this guy got crazy for missing out on one of his bacon strips!

As you can see, “back bacon” aka a bacon rasher, has a different shape than traditional American bacon, but it no doubt is just as delicious, so of COURSE he would be angry!

Bite Down On Donald Trump! A Mouthful Of “Trump Burger” That Is! UK’s National Burger Day Gets Trumped!!

Time To Bite Into Some Beautiful Burgers – And Donald Trump, Too!

The great website “BurgerBusiness.com” just announced a big day of burgers in England. It’s the third annual celebration of the UK’s “Nation Burger Day” on Aug. 27, and includes 20% discounts on burgers at hundreds of UK restaurants!

There is also a “Street Feast” Thursday evening at Dalston Yard in northeast London! Kudos to “BurgerBusiness” for the story, and for giving us the inside bite on Donald Trump as well!

That’s right, according to the website: “National Burger Day may be a UK event, but Donald Trump is there, too, if only in name.”

Here is how “BurgerBusiness” describes their mouthful of Trump:

“The Donald Trump Burger is the National Burger Day entry from London’s Lucky Chip Burgers (which features Kevin Bacon, John Belushi and vegan Woody Harrelson burgers on its regular menu). The Trump Burger is cooked medium, with the restaurant warning that “there might be some blood coming out of it,” according to the Evening Standard. The topping include applewood-smoked bacon, American cheese and a “really, really rich” bourbon-vanilla barbecue sauce. Grilled onions will be neatly arranged on top a la The Donald’s hair, and it has pickles that “will leave a sour taste in your mouth.”

Well, I love their attitude! Although there is no way Donald Trump will be there to enjoy it, we can all imagine that he would look a bit like this if he were:

The name is derived from the word okonomi, meaning “what you like” or “what you want”, and yaki meaning “grilled” or “cooked” – and they’ve taken it to the extreme!

As you can see, it’s a diverse menu, and we dove in head first! You have four different burgers, with three different topping options…plus specials as well – and yes, those are “Seaweed Fries” you see listed! I will show you those, but first we had to try these:

Yes, these deep fried Octopus balls came in a delicious mayo with green onions – they were moist, full of great chunks of Octopus, and very filling for an appetizer!

Now, time for the main course: time to dive into a Ramen Burger! First, you are served a burger wrapped in a very unique manner:

The key to an international slider is what flavors the basic hamburger patty. Your basic hamburger uses good quality ground beef with at least 15% fat content, to ensure lots of juicy flavor. I mix in raw minced onion and minced garlic, with salt, pepper as well.

That’s it for me – upon this temple of meat flavor, I add unique ingredients that give my sliders an international flavor…here are some of my favorite recipes!

Spanish Sliders – Hamburguesa!

Let’s get started with Spain, since I just got back from Barcelona…this is a great example of taking a regular burger and giving it an international feel…using some of the special spanish flavors to give the burger a catalonian flavor!

Begin by cooking the burger first with Manchego cheese (a sheep’s milk cheese from the La Mancha region in Spain) and Jamón Iberico, (Iberico ham – prosciutto-like ham that comes from Spanish black pigs). Then, top the burger with olive tapenade…you can find recipes for making it, or you can buy it in a jar, but it includes black olives, capers, anchovies, garlic, olive oil, and lemon juice. Take a bite and you will wake up in Barcelona…

Or, if you are just in the mood for a burger that will drive you NUTS…or perhaps you don’t want a burger at all, well here’s the answer!

The Nut Burger!

The Nut Burger was made famous at Matt’s Place Drive-In in Butte, Montana. Matt’s Place Drive-In was established in 1930.

And, in honor of vegetarians who have chosen to read this post, there is a great “no meat” burger waiting for you!


“No Meat” Nut Burgers!

1 medium onion
1 cup walnuts, pecans, almonds, cashews or other nuts, preferably raw
1 cup (raw) rolled oats or cooked short-grain white or brown rice
2 tablespoons ketchup, miso, tomato paste, nut butter or tahini
1 teaspoon chili powder or any spice mix you like
Salt and freshly ground black pepper
1 egg

2 tablespoons peanut oil, extra virgin olive oil or neutral oil, like grapeseed or corn.

1. Grind onion in food processor. Add nuts and oats, and pulse to chop, but not too finely. Add remaining ingredients except oil. Process briefly; don’t grind too finely. Add a little liquid — water, stock, soy sauce, wine, whatever — if necessary; mixture should be moist but not loose.

2. Let mixture rest a few minutes, then shape it into 4 burgers. (Burger mixture or shaped burgers can be covered tightly and refrigerated for up to a day. Bring back to room temperature before cooking.) Put oil in nonstick or well-seasoned cast iron skillet and turn to medium. When oil is hot, add burgers to skillet. Cook about 5 minutes, undisturbed, until browned, then turn with spatula. Lower heat a bit and cook 3 or 4 minutes more, until firm.

This is good enough to satisfy meat eaters, too!


Korean Kimchi Barbecue Sliders

When I was in Seoul, we ate every night at a korean BBQ, where you grill your own meat and seafood on the round grill embedded in your table, then wrap the grilled food around lettuce or thinly sliced pickled vegetables. Taking that as an inspiration, Korean sliders are best when you add pickled cucumbers, a splash of rice vinegar and kimchi.

As you can see, it’s all about how you season your burger patty – and there’s a world of great flavor to enjoy!

Japanese Wasabi-Avocado Slider!

I read about this over the holidays and I made one…it was delicious! It is very simple: a slider patty topped with sliced avocado, and a heavy dose of wasabi mayonaise. Trader Joe’s sells it, or buy some great mayo and wasabi and mix it together to the strength you can handle…this is delicious with a Sapporo! One last look….trust me, MAKE THIS ONE!

The Sriracha Burger!

Wasabi not powerful enough for you? Well, THIS will do the trick:

This is a GREAT idea…the recipe is from the terrific “Serious Eats” website!

Sloppy-Sriracha-Burger

3 pounds ground beef (preferably chuck, 80/20)
1/4 cup soy sauce
10 tablespoons Sriracha
4 teaspoons freshly ground black pepper
4 slices thick-cut bacon
2 large sweet onions
3/4 cup blue cheese dressing
8 sesame seed buns
8 thick slices Swiss cheese
1 large beefsteak tomato, sliced
Arugula or romaine lettuce

In a large mixing bowl, combine the ground beef, soy sauce, 5 tablespoons of the Sriracha, and the pepper.

Cook the bacon. While the bacon is cooking, peel and quarter the onions. Once the bacon is cooked through and slightly crispy, remove the slices from the pan, reserving the remaining bacon fat in the pan. Cook the sliced onions in the bacon fat over medium-low heat until they caramelize, 20 to 25 minutes.

Grill the burgers. While the burgers are cooking, in a small bowl, combine the blue cheese dressing with the remaining 5 tablespoons Sriracha. Lightly toast the buns on the grill during the last minute of cooking time.

To assemble, spread the blue cheese mixture on both halves of each hamburger bun. Stack a burger patty, Swiss cheese slice, bacon, caramelized onions, tomato slice, and a small handful of arugula between each hamburger bun.

I uncovered these two years ago in Melbourne. They add a slice of beetroot underneath the burger. It adds a great, slightly nutty flavor to the slider. Look at how beautiful that big chunk looks on the burger above…Everything else is the same – add cheddar cheese, tomato, lettuce if you like – and if you want to go totally Aussie, add a fried egg on top….the best!

Now, if you REALLY want to get creative, throw the concept of a slider out the window altogether!

Teddy’s is a classic Hawaiian burger chain that has opened in Japan, and they announced their arrival with the “Giga Monster Burger”, which – as RocketNews24 points out – “combines their Classic, Original, Western, Avocado, and C.C. Rider burgers into a giant, towering monster that should please even the pickiest burger afficianado, weighing in at 1.8 kilograms (four pounds)!”

With so much burger comes a very big price: 6,800 yen/US$64 – yes, $64 for a burger, but I say that a 4-lb. masterpiece like this can be split at least five ways, so grab some friends and go to town!

Time To Get “Wrapped Up” In Tokyo!

Yes, this is a triple cheeseburger wrapped in plastic! When I posted Tokyo food pics recently, I received a few comments asking “where’s the beef?”

Well, here it is!

I knew I was in for a “burger-ific” time in Tokyo – after all, I’ve posted many times about the unique burger for sale here – and when I arrived in town, I saw this in front of me on my first day out in the crowded streets:

Yes, it’s a “burger” shirt! With that in mind, I forced my wife Alex to search the crowded street of Kabuki-cho and Shinjuku for just one thing: a burger!

This was Alex’s first time to Tokyo, so we hit a bunch of different neighborhoods – all packed with people – with a singular goal in mind. I knew I had to try a burger while I was here, and one day as we rounded a corner, look what we found:

Yes, it was a bit rainy outside, but Lotteria burger was exactly what I wanted to find. I have posted about them many times, and I had to see it for myself. Once inside, the burger chain was already showing me signs of greatness:

The “special” burger was a $10 Wagyu beef burger – served simply with a big round wagyu patty, some lettuce and mayonnaise…

At first glance, the burger isn’t impressive: not that big, daily plain in appearance – but take a bite and what you get is a huge mouthful of wagyu flavor!

The flavor was terrific, and the crunchy lettuce and mayo were a great accompaniment…in fact, the only issue was that patty: it was so huge and round like a tennis ball that the patty and lettuce kept sliding out of the bun!

Alex had a bite and agreed that it had a very strong beef flavor – and it was a nice way to bite down on some unique Tokyo wagyu!

Lotteria offers tiny little cubicle seating, and inspirational signs all around you…it was a fun place to go for a quick bite!

However, I wasn’t able to sample my favorite Lotteria burger, which is this:

I could have had a shrimp burger, a burger with an egg on it, and other varieties as well. They were out of the special edition “burger with everything on it”, but don’t worry, you can see the entire recipe for it here:

Meet Chef Kappabashi!

Well, that’s not his name, but it is IS the name of Tokyo’s “kitchen town”, a series of streets full of kitchen supplies – and plastic food! It sits alongside a small road that is very colorful:

In Japan, every restaurant shows you the kind of food they serve by lining up “plastic” samples in the window – so you know exactly what kind of menu they offer…so we went to the source to buy our own…

Maiduru’s Legendary “Fake Food!”

The best-known store for plastic food is Maiduru, so we went into to see all of the greatest plastic food they had to offer:

My son Jeff joined Alex in a search for a new iPhone cover for me – you know, to replace this one:

Unfortunately, there were no good replacements, and the iPhone6 offered this crazy option:

Yes, it’s an oyster shell stuffed with what looks like a yellow oyster! And it was HUGE! No such luck with that, so I did the next best thing.

What will I do with it? You are asking the wrong question! The real question is: “how cool are you?” And the answer is: “very.”

I think I will use it as a paperweight – or just a triple cheeseburger always in the office to remind me of lunch.

As one of my Japanese friends told me the other day: “even WE don’t do that!” That is “breakfast sushi”, because it is served that Tokyo’s legendary fish market beginning at 7a!

Yes, the world’s greatest movie monster is back! For the 31st time, Japan cinemas has fans roaring in delight at the latest “Godzilla” film – first, check out the trailer!
